Vanilla Bean Fudge

Baking temperature: 240 degrees
Baking time: 25 minutes
Yield: serves 25


  • 1 ½ c granulated sugar
  • 6 T unsalted butter, cut into pieces
  • 1/3 c evaporated milk
  • 1 cup white chocolate chips
  • 1 c marshmallow fluff
  • 1 t vanilla extract
  • 1 vanilla bean, cut lengthwise and seeds scraped


  • Line an 8 x 8 inch pan with parchment paper
  • In a heavy-bottom saucepan, combine the sugar, butter and milk. Bring to a rolling boil, stirring until everything is smooth. Boil for 5 minutes, stirring often (do not cut time short or fudge may not firm up when cool)
  • Remove from heat and stir in the chocolate chips, marshmallow fluff, vanilla extract and the bean seeds
  • Spread into the pan and let cool until firm, at least 4 hours or overnight before cutting
